Get inspired this Easter holiday and take this Easter Egg Granola Tart to your family gathering! Making your own granola is simple and it lets you control the ingredients. A tip to a crunchy granola base is letting the crust cool completely in the oven with door propped open. For a chewier crust, cool on a rack and store in an airtight container until ready to decorate.

Easter Egg Granola Tart
2 cups rolled oats
1/2 cup shredded coconut
1/4 cup sunflower seeds
1/4 cup pepitas
1/4 cup white whole-wheat flour
1/2 tsp. sea salt
1/3 cup plus 1 Tbsp. honey
1/4 cup coconut oil
2 cups plain Greek yogurt
Fruit for decorating
Heat oven to 300 degrees.
Line two large baking sheets with parchment paper. In a bowl, combine rolled oats, coconut, sunflower seeds, pepitas ** pumpkin seeds, flour, and salt.
In a small saucepan, combine 1/3 cup honey and oil over gentle heat. Remove after it reaches a gentle boil and stir it into dry ingredients.
Press into four equal-size egg shapes on prepared baking pans. Bake until lightly golden, about 25 minutes. Turn off oven and let granola cool completely with the door propped open.
When ready to serve, combine yogurt and remaining honey. Spoon onto crusts. Decorate with fruit such as blueberries, kiwi, strawberries, bananas and pineapple.
