Freezer Meal Favorites

We know busy families can benefit from freezer meals which is the inspiration behind the month’s newsletter. These delicious recipes can be enjoyed right away or frozen for another time. Freezer Chicken Wild Rice Soup

Freeze together the following ingredients:

  • 3 cups mirepoix {diced celery, carrots, onion}

  • 8 ounces mushrooms, diced

  • 3 cloves garlic, minced

  • 1 cup uncooked wild rice

  • 4 cups chicken or vegetable broth

  • 1 tsp. sea salt

  • 1 tsp. poultry seasoning

  • 1 lb. chicken breasts

    Add after cooking:

  • 6 tbsp. butter

  • 1/2 cup white whole wheat flour

  • 1 1/2 cups whole milk or milk of choice

Instant Pot: From frozen 30 minutes on high pressure with a 10 minute natural release.

Slow cooker: From frozen, 4 hours on high

Instructions: In a medium sauce pan melt the butter. Add in flour on medium heat and whisk until a paste forms. Whisk in milk until thick and creamy. Add to the soup and stir until incorporated.


Tandoori Chicken

Freeze together the following ingredients:

  • 2 lbs boneless skinless chicken thighs

  • 2 Tbsp. garam masala

  • 1 Tbsp. chili powder

  • 1 Tbsp. garlic powder

  • 1 Tbsp. ground cumin

  • 2 tsp. sea salt

  • 2 tsp. turmeric

  • 1/2 tsp. ground ginger

  • 1/2 tsp. cayenne pepper

  • 2 tbsp. honey

  • 1 14 ounce can coconut milk

  • Cilantro, on top to serve

Instructions: mix spices together in small bowl. Add to freezer meal container with chicken and coconut milk.

Instant Pot: From frozen set pressure cooker for 15 minutes on high with a 20 minute natural release.

Slow Cooker: From thawed, set to 4 hours on high.

Serve atop rice, sweet potato, cauliflower, spaghetti squash or other vegetable/starch variety. Finish with cilantro herb on top.
