It's the Happiest Season of All!

We hope this season has brought you many joys! We also hope your family has benefited from the simple, delicious menus we deliver each week via our APP. This month we slowed things down a bit and provided some time saving recipes. We love using slow and pressure cookers, because they give so much flavor to dishes. Yet, they keep you out of the kitchen and allow you to spend more time with those you love this holiday season. Below you will find a dish coming up in our catalog! Perfect for the winter season. Beef and Barley Soup


  • 1 1⁄2 lbs lean ground beef

  • 1⁄2 cup chopped onion

  • 1 clove garlic, minced

  • 2/3 cup pearl barley

  • 3 medium carrots, diced

  • 3 stalks celery, diced

  • 1 (28 oz) can diced tomatoes

  • 3 1⁄2 to 4 cups beef broth, low sodium

  • 2 cups water (or use additional beef broth instead)

  • 1 (10.5 oz) can tomato soup

  • 1 bay leaf

  • 1⁄4 cup fresh Italian flat leaf parsley, minced

  • 1⁄2 tsp sea salt

  • 1⁄4 tsp ground black pepper

  • 1 tbsp olive oil

  • side salad (optional)

  • whole grain baguette (optional)


  • In a large skillet, over medium high heat, heat 1⁄2 TBSP of olive oil and brown ground beef, drain and set aside.

  • Add other 1⁄2 TBSP olive oil and cook onion and garlic in skillet.

  • Line the slow cooker with a liner for easier clean up if desired.

  • Transfer the ground beef and onion, garlic mixture to the slow cooker.

  • Add barley and remaining ingredients.

  • Cover and cook on low for 6-8 hours.

  • Season with the sea salt and pepper to taste.

  • Remove bay leaf.

  • Serve the soup with a side salad if desired and/or whole grain baguette or rolls for dipping in soup.
